Moorea green beans › FAQ
Green beans: your questions answered
The questions we are asked most often about extra-fine green beans, cooking them, where they come from and traceability.
What is an extra-fine green bean?
A green bean picked very young, before its seeds swell. Its pod is no more than 6 millimetres wide, which makes it more tender and crisp than a fine green bean.
What is the difference between extra-fine and fine green beans?
Size. An extra-fine (or "very fine") bean is no wider than 6 mm; a fine bean goes up to about 9 mm. Extra-fine beans are picked earlier, are more tender and cook faster.
How long should extra-fine green beans be cooked?
6 minutes in a large pan of salted boiling water for crisp beans, 10 minutes for tender beans, or 12 minutes steamed. Then plunge them into iced water to keep them bright green.
Do green beans need topping?
Moorea green beans in trays are already topped: just rinse them. Those sold in bags are not: pinch the little stem between two fingers and it snaps right off.
How should fresh green beans be stored?
In the fridge, between 4 and 8 °C, in their tray or bag. Only rinse them just before cooking and eat them within a few days of purchase.
Where do Moorea green beans come from?
Depending on the season, from Kenya, Morocco, Egypt or Senegal: countries where they grow in the sun while it is winter in France. Kenya, on the equator and farmed at altitude, grows them all year round; Morocco, Egypt and Senegal take over in season. The exact origin is always shown on the label.
Are Moorea green beans checked?
Yes, at several stages. Samples are regularly tested in the laboratory, in particular for pesticide residues. French state inspectors also check imported beans on arrival. Finally, every delivery is inspected by Moorea in Rungis (colour, size, firmness, freshness, temperature), with a quality report for each batch.
What is the batch number on the tray for?
It lets us trace the whole journey of the tray: the grower and packing date, the shipment and its arrival date, the test results and the Rungis inspection report. For any question, write to sav@moorea.fr with this number.
Who is Moorea?
Moorea is the leading importer of green beans in France. Based at the Rungis international market (69 rue de Perpignan, 94632 Rungis), it also imports and distributes snow peas, sugar snaps, shelled garden peas and other vegetables, available in shops all over France.
