Sugar snaps
Round, juicy and sweet: sugar snaps are eaten raw or barely cooked.
What are sugar snaps?
Sugar snap peas have a round, plump pod that is eaten whole with the peas inside. They are fleshier and juicier than snow peas.
How to choose them
Look for well-rounded, bright green, glossy pods that feel firm.
How to store them
In the fridge, between 4 and 8 °C, in their tray, and eat them within a few days of purchase.
How to prepare them
Rinse them and remove the little stem and the string if needed.
How to cook them
Raw as a snack, or 1 minute in salted boiling water then into iced water to keep their crunch and colour.
