Snow peas
Flat, sweet and crisp: snow peas (mangetout) are eaten whole, pod and all.
What are snow peas?
Snow peas are a variety of pea whose pod is eaten, picked while still flat, before the peas inside swell. They are tender, sweet and very crisp.
How to choose them
Look for flat, bright green, firm and glossy pods that snap cleanly when bent. Avoid soft or spotted pods.
How to store them
In the fridge, between 4 and 8 °C, in their tray. Eat them within a few days of purchase to enjoy their crunch.
How to prepare them
Rinse them, then pinch off the little stem and pull away the string along the pod.
How to cook them
1 to 2 minutes in salted boiling water then into iced water, or 2 to 3 minutes in a hot wok. They are also great raw, in salads or as a snack.
